Hi,
The default setting button is useful in most of the cases, where the users can avoid the same selection details entering every time. Not sure why you want to restrict it. 
If you want to restrict, create a transaction variant in SHD0 for MM01 and hide the button. In the transaction variant, you can go to menu functions button as shown below and deactivate the "save defaults" button as shown below:
